       Hopefully the new year has kicked off to a good start and everyone is staying active and healthy.  Stick to those new years resolutions and you will be sure to get closer or better yet obtain your weight loss goals.  This year marks Dr. Cirangle's 10th anniversary with  Laparoscopic Associates of San Francisco, yet another reason to celebrate 2012!

Tasty Bites by Alisha: Jerky, Jerky, Jerky

       I have suggested jerky to many patients who are are in phase three and eating solid foods when they are looking for a good source of protein while out and about or traveling.  The response I get most often is, "what about the sodium?" To which I often recommend a low-sodium jerky if you can find it or better yet make your own!  

After making and tasting no less than 5 recipes , I found the jerky jackpot!  The jerky does require time to marinate but the effort is definitely worth it.  If you have a food dehydrator great, inexpensive ones can be purchased at Bed Bath and Beyond or online, if not use the oven.  Each 1 ounce serving has  50 calories, 2 g carbohydrate, 6 g protein, and only 260 mg sodium.  Note American's should have 1,500 mg of sodium or less daily according to the Institute of Medicine.  This jerky easily makes the cut!

Beef Jerky

1 lb of very lean beef or venison (I used London broil)

2 cloves of garlic minced or pressed

1/2 cup Coconut Aminos*

1/2 tsp salt

1 tsp paprika

1 tsp onion powder

1 tsp garlic powder

Partially freeze meat for 2-4 hours, until mostly solid.  Slice meat into 1/10th inch thickness strips.  

 *** If you go to the meat counter the butcher may even cut it for you -- mine does!

Mix the coconut aminos* with minced garlic, salt, paprika, onion powder, and garlic powder in a large Tupperware container with a lid.  

Allow meat to marinate for 2 - 24 hours in the refrigerator.  Longer marinating will provide better flavor.  

Heat oven to 170 degrees.  If using an oven in place of a dehydrator, set up racks over cookie sheets lined with aluminum foil(for easier cleanup).  Lay strips of beef out on racks and place in oven.

Cook at 170 for 3-4 hours. Thinly sliced meat will take less time, thick sliced meat will take longer.  Closely monitor meat to ensure it doesn't try out too much.  

*Coconut Aminos can be substituted with a low-sodium tamari/soy sauce, however the sodium will be higher.

Coconut Aminos have 65% less sodium than soy sauce




When the coconut tree is tapped it produces a highly nutrient-rich "sap" that exudes from the coconut blossoms. This sap is raw, very low glycemic, an abundant source of 17 amino acids, minerals, vitamins, and has a nearly neutral pH. A comparison between coconut tree sap and soy, shows that coconut sap contains 2-14 times the amino acid content of soy.

Recipe Tips:Use Coconut Aminos like soy sauce in dressings and marinades "We love it so much we pour it over almost everything!"

Note: Due to the naturally occurring fermentation of this product, the contents may fizz when opened. Refrigerate after opening to reduce fizzy effect.
