 Why should you spend more money on a made-from-scratch pie? When I was growing up in a small town in North Dakota, the highlight of my summer vacation was spending time at my grandmother's house learning to bake. She would make my sister and I go to bed early the night before our baking day to make sure we wouldn't miss the crucial steps that happened at dawn. We learned to make everything from scratch-cookies, cakes, bread, buns, bars, icings and of course, pie crusts and fillings.
The best thing for us was licking the bowls, beaters and making "crust" with the leftover pie dough. What is "crust" you ask? A true delicacy-pie dough rolled out, cut into squares, topped with cinnamon and sugar and baked until golden-this is heaven! As we got older, we requested "crust" more than the pies themselves.
This memory for me is why it is so important to make every component of our pies from scratch. Sure, instead of spending hours making, rolling and creating each pie shell from hand, it would be easier to buy pre-made shells, but would it be as good? I know from experience that it isn't! Instead of peeling cases of Granny Smith Apples and Bartlett Pears, we could buy pre-made fillings from a can (often loaded with additives and preservatives) and in turn sell our pies at a lower cost. It is these "shortcuts" that supermarkets and some bakeries make in order to offer you pies at a low price.
