
It's (very nearly) summer! We might just be too excited about warm days and fresh fruits and veggies to wait until the official date that summer starts to dig in to summer recipes. This easy, delicious mango salsa from VN contributor Cherie Soria brings together the poppy colors and bold flavors of mango, bell pepper, and avocado. Great on tacos, dolloped on soups, or wrapped up in lettuce cups, there's no wrong way to devour this mouthwatering salsa.
Serves 6
What You Need:
1/2 cup mango, peeled, seeded, and diced
1/2 cup red bell pepper, seeded and diced
1/2 cup cucumber, peeled, seeded, and diced
1/2 cup avocado, peeled, seeded, and diced
What You Do:
In a bowl, toss all ingredients to combine.
