Perfect Back to School Lunches!
As much as I want to pretend that summer isn't coming to an end, it's undeniable. It's particularly painful because we don't start to feel summer heat in San Francisco until late August. So, just as it's sunny enough that you'd want to spend all day outside, it's time to head back indoors. Cruel. However, I know one thing that can make going back to school somewhat more sufferable—the perfect packed lunch! School day blues will be wiped away when your favorite student opens up a lunch bag filled with the goodies below. These recipes get straight-A's in deliciousness!

    Inspired Indian Chickpea Sandwich
    I love chickpeas. They are so freaking versatile. I could write an entire VegWeb Weekly about their glory. In fact, I might just do that so stay tuned. Until then, this sandwich filling will have to suffice. It's a delicious and creative play on the classic tuna salad, except without all the Mercury grossness. It's great on crackers, eaten with a spoon, or between two slices of bread for the perfect sandwich. In fact, this recipe is kid approved so if you don't eat it all first, send it to school with the munchkins! If you're feeling extra decadent, I suggest serving it wrapped in naan bread, the most delicious stuff in the world. Seriously, when I die, please mummify me in a giant piece of naan. Don't be surprised if I come back to life just so I can eat my way out!

    What You Need:

    1/4 cup onion
    1-1/2 cups chickpeas
    1-1/2 teaspoon curry powder
    1/2 teaspoon coriander powder
    2 tablespoons vegan mayonnaise
    1 tablespoon lemon or lime juice
    Salt and pepper to taste

    What You Do:

    Place all ingredients in a food processor, and blend until combined. Serve on your favorite bread with all the fixin's.

    What do you do when you're not on VegWeb? When I'm not on VegWeb, I'm thinking about going on VegWeb or making recipes that I've copied down from VegWeb. I also work, and go to school, concerts, a tutor, watch way too many movies, and hang out and cook with friends.

    Favorite VegWeb recipe to make for non-vegans? I'll have to say Cinnamon Rolls by Sneaky Greens... but only when topped with Cinnabun Icing by deadbob9—they are a constant shock for non-vegans.

    #1 cooking secret/tip? When baking, I always use a teensy more vanilla extract then called for and it totally makes a difference. Unless it's all in my head, haha.

    French fries or ice cream? Ice cream, hands down. Especially my homemade blueberry cheesecake ice cream.
