Vegan Sweet Pink Smoothie
Is it spring yet? Maybe not, but that hasn’t stopped us from gathering some of our favorite fruit (blood oranges, pineapple, and strawberries) to blend a bright, refreshing smoothie from Kristina Carrillo-Bucaram’s brand-new cookbook, The Fully Raw Diet. This smoothie is an excellent way to start the day and these four ingredients blend into a perfect elixir that will have you feeling your best all day long. Can’t get enough of author/online sensation Fully Raw Kristina? Neither can we! Check out her 10 tips for staying healthy in the new issue of VegNews.
Makes 4 cups
What You Need:

2 to 3 cups coconut water
1/2 pineapple (about 12 ounces), leaves and rind removed, cored and cut in chunks
2 to 3 blood oranges, peeled, seeded, and cut in chunks
2 cups fresh strawberries, with stems

What You Do:

1. Chill all ingredients. In a blender, place ingredients and blend until smooth, starting on the lowest speed and gradually working up to the highest. Blend until the mixture is smooth and the sound of the blender is high pitched and steady.

2. Drink immediately, or refrigerate for up to 4 hours in a tightly closed container. Shake before serving.
