Recipe Spotlight on Summer Berries

Rasperries, blueberries, blackberries, oh my! Summer berries are the highlight of my year. I just want to mash them all up into a jam and eat it with literally everything. Breakfast, lunch, dessert, is there anything that berries can't make better? I'll stop you because the answer is NO. And as soon as I can get my hot little hands on one of those magical Vita-Mix (my birthday's coming up! In May! It's never too early!), I will be truly unstoppable in the berry department. Ah well, my garage sale special blender will have to do for now. Here's hoping it'll still be going strong(-ish) until the day it dies making my favorite Very Berry Breakfast Smoothie.

Cooking with Webmistress Laura: Fresh Berries with Coconut Whipped Cream!

This is the single best dessert I've ever had. Okay, I know I say that about everything but this really is. REALLY. Until next week. Anyway, it's simple, delicious, and will impress your most skeptical friends. Coconut makes some of my favorite creamy desserts and this is no exception; the coconut whipped cream is truly spectacular.

Coconut Whipped Cream by VegWebber mamaanna

1-15 ounce can coconut milk
1/2 cup vegan creamer (I used plain Silk creamer)
1/2 cup plus 2 tablespoons Ener-G Egg Replacer
Pinch of salt
3 tablespoons sugar
1-1/2 teaspoons pure vanilla extract

1. Combine all ingredients in a mixing bowl and mix on high with an electric mixer for approximately 3 minutes. Pour into a freezer-safe container and freeze for 3 to 4 hours, whisking occasionally, until ready to serve.

2. When the Coconut Whipped Cream is done, serve it on top of your favorite summer berries and maybe a sprinkle of powdered sugar. Actually, definitely powdered sugar.

It's hard to believe that something so easy can taste so good. VegWeb, I love you.

What is the best thing about being vegan? Surprising people with vegan baked goods that taste just as good as the ones they are used to.

Most romantic recipe on VegWeb? The "Best Tasting Pancakes Ever! Vegan or otherwise." What's more romantic than making pancakes with your sweetie on a sunday morning?
