Okay, let's be honest. I say "desserts" but you know what I mean. I mean PIE. The Thanksgiving table is not even close to complete without the addition of delicious pie. Pumpkin, pecan, sweet potato, apple... the list goes on and on. And I want to eat the whole thing. VegWeb has some of the best pie recipes on earth, and we won't stop until your entire Thanksgiving table is covered in pie. Forget everything else, let's just eat pie on Tofurky Day. I don't need anything else. Okay, I joke. I need the stuffing. And the gravy. And the green bean casserole. But really, I'm going to strive for several pies to round out my Thanksgiving binge, uh, I mean meal. You should do the same. Pie!

Everyone knows the secret to a truly excellent pie is the crust. Don't be intimidated by all the demanding dough recipes out there – I've got one of the easiest around. It's just a little labor intensive but it always pays off. When someone compliments you on your rich, buttery, vegan pie crust, you'll be over the moon. Mastering the perfect crust isn't hard, it just takes a little time. Don't worry, I'm sure there are several people in your life who won't mind if you test your blossoming skills on them. And if you don't, just send me an email and I'll happily be your guinea pig. I'm willing to travel. Seriously. My recipe yields two pie crusts because making pie should be done in twos. However, if you're feeling less gluttonous than I, it can easily be halfed. Or if you're even more awesome than I am, it can just as easily be doubled.
What You Need:
1-3/4 cups pastry flour
2 teaspoon sugar
2 teaspoon salt
1 cup margarine, cold (I use Earth Balance)
1/2 cup water, cold
What You Do:
1. In a large bowl, mix together the flour, salt, and sugar. Cut in the margarine. Stir the water in until you have a large, cohesive ball. Cover and chill dough in refrigerator for at least an hour.
2. Roll out dough on a floured surface. If you don't have a rolling pin, use a glass.
3. Place dough in a pie pan, and you're ready to go!
