Recipe Spotlight on New Years' Resolutions!
It's 2010. Can you believe it? I swear, it was just 1999. Time flies when you're getting older! That's how it goes, right? Either way, the new year is upon us and it's time to make (and break!) those time honored resolutions. New year's resolutions are as American as apple pie (mmm... apple pie). Whether you're planning on getting healthier, getting happier, or getting a new car (Hey! I really want a hybrid!), New Years' resolutions are a must. Who cares if you break them 10 days in? Isn't it healthier to eat more kale 10 days out of the year rather than none? And guess what? Kale kinda rocks. If you make the resolution to eat it every day, maybe you'll end up eating it a couple times a month, and that's pretty great. And if that's your resolution, might I suggest Feel Good Kale with Pasta? Because it's freaking delicious.

This year, one of my New Years' resolutions is to eat more salad. Seeing as last year I made the resolution to eat more chocolate and succeeded in a way that embarrases even me, I'm assuming salad should be about the same. In my honor, I'm asking you to submit as many salad recipes as you can to VegWeb. I promise that any new salad recipe that gets added to the site will get a proper making by me. I've got my organic lettuce and tomatoes, so bring it. In the interest of fairness, I'll share my favorite salad recipe with you. It's nothing fancy, but when a quick healthy dinner is needed, it comes to the rescue. don't forget the brownies for Dessert. What? It's the holidays! Kind of!
What You Need:
5 cups spinach
1 medium tomato, diced
1/4 cup vegan bacon bits (I use Bacos)
1 cup olive oil
1/2 cup red wine vinegar
2 tablespoons dijon mustard
1 teaspoon sugar
Salt and pepper, to taste
Vegan blue cheese, chopped (optional)
What You Do:
1. Place the spinach and tomato in a large salad bowl.
2. In a mixing bowl, combine vegan bacon bits, olive oil, red wine vinegar, mustard, sugar, salt, and pepper. Whisk until combined. Pour over spinach and tomatoes and top with vegan blue cheese. Enjoy!

What do you do when you're not on VegWeb? Play Dominos with my daughter, organize and shoot cooking videos, blog, do yoga, meditate, mail books, exercise, and eat damn good vegan food.
Favorite VegWeb recipe to make for non-vegans? Perhaps my recipe for Chocolate Decadence Cake. I have to apologize, because I don't try too many other recipes. As a cookbook author and long-time caterer, I'm always fiddling with my own recipes so I rarely get a chance to try other peeps' recipes.
Tempeh, tofu, or seitan? I'd like to say tempeh because it's uber-nutritious, but I just looooove tofu. It's so versatile and always up for new adventures.
