  Winter Beet Salad

OK, let's get this over with: This salad is so easy and delicious, it can't be beat! Now that we've cleared up the inevitable beet/beat joke, let's discuss this salad for real. It's delicious! And easy! And shredded beets bring a colorful punch of nutrition to any meal, which is one of the many reasons why we love them so. Beautiful, tasty, and good for you? Beat that!

Serves 2

What You Need:

2 cups mixed baby greens
1 medium beet, peeled and shredded
3/4 cup thinly sliced fennel
1/2 cup finely chopped walnuts
2 tablespoons olive oil
2 tablespoons lemon juice or balsamic vinegar
Salt & pepper to taste

What You Do:

In a serving bowl, combine all ingredients. Toss gently and serve.
