Vegan No-Bake Granola Bars
The kids are back at school, so it’s time to get creative with making their lunches. The VegNews Recipe Club is here to help, bringing you these easy-to-make granola bars from Dreena Burton's Plant-Powered Families cookbook. Made with healthy (and tree nut-free) ingredients like coconut butter, brown rice crisp cereal, and oat flour, these scrumptious treats are sure to please even the most finicky of young palates, but let's be honest: we're loving these no-bake bars here at the VegNews offices as well!
Makes 8–10 bars
What You Need:

1/2 cup brown rice syrup
1/4 packed cup coconut butter
1 teaspoon vanilla
1/4 teaspoon sea salt
1/4 teaspoon cinnamon
1 cup rolled oats
1/4 cup oat flour
2 tablespoons unsweetened shredded coconut (optional)
1-1/2 cups natural brown rice crisp cereal
3 tablespoons non-dairy chocolate chips (optional)

What You Do:

1. Line an 8×8-inch pan with parchment paper. In a medium saucepan over medium/medium-low heat, add brown rice syrup, coconut butter, vanilla, sea salt, and cinnamon. Stir until well combined and coconut butter has melted. Add rolled oats, and stir through, allowing to cook for 2–3 minutes on low heat. Add oat flour and shredded coconut, and stir through.

2. Remove pot from stove. Swiftly stir in cereal and transfer mixture to prepared pan. Press mixture evenly into pan using a non-stick spatula or piece of parchment paper.

3. Wait just a minute, and then sprinkle on chocolate chips and press into base. Refrigerate until fully chilled (at least 30 minutes), then cut into bars.
