Vegan Cinco De Mayo!
Happy Cinco de Mayo! It's almost the 5th of May, and it's time to live it up! Cinco de Mayo isn't Mexican Independence Day; it's actually an unofficial holiday that celebrates the Mexican victory over the French at the Battle of Puebla. While Cinco de Mayo has limited significance nationwide in Mexico, the date is heavily observed in the United States. How is it observed, exactly? Oh, just with eating, drinking, and dancing in the streets until all hours. Looking for me tomorrow tonight? I'll be the crazy-looking red-head with a margarita in a sippy cup and a tray of taquitos. Viva México!

    Strawberry Basil Margaritas
    One of my best Cinco de Mayo memories was working at a Mexican restaurant and serving up some of the most amazing margaritas ever. I drank many margaritas–when I was off the clock, I swear! The next day, I pulled the bartender aside to ask her to divulge the secret to her mind-blowing margaritas. She wouldn't give me the secret so I decided to delve into research head first. Or, mouth first, as it were. After months and months of delicious research, I think I have it: The Perfect Margarita. It just so happens that The Perfect Margarita is made with sweet strawberries and fresh basil. It's sweet, tangy, and thirst quenching. Plus, it's just as delicious without the tequila and Cointreau, so it's kid friendly, too! I know, I'm a genius. Send the thank you cards, flowers, and cash to the VegWeb HQ, please.

    Serves Two

    What You Need:

    1 cup fresh or frozen strawberries, hulled
    1/4 cup tequila
    1 tablespoon orange-flavored liqueur (I like Cointreau)
    1 tablespoon agave
    1 tablespoon lemon juice
    8 ice cubes
    2 tablespoons basil, chopped roughly

    What You Do:

    Combine the strawberries, tequila, liqueur, agave, and lemon juice in a blender and mix on low until smooth. Add the ice and purée until the ice is crushed, about 30 to 60 seconds. Stir in basil and enjoy!

    They say you get more bees with honey than with vinegar. Well, I say that you get more vegans with Bee-Free Honee than with honey! Oh, and the bees like you better that way, too. Bee-Free Honee is an apple-based sweetener that's absolutely delicious. It's perfect for sweetening up any of your Cinco de Mayo dishes. I used it instead of brown sugar in these No Bake Mexican Hot Chocolate Cookies and they were eaten in five minutes flat. I've also stirred it into tea, mixed it with granola, and just squeezed it into my mouth. Don't knock it 'til you've tried it. Viva la (Bee-Free Honnee) Revolutión!
