Ravishing Raw!
Raw food gets a bad rap. Sometimes you get slack for eating vegan, but what's weirder than that? Eating raw. Some vegans even like to point the finger at raw foodists when people accuse them of being odd. Like, look over there! Those people are the real freaks! Well, the stigma attached to raw foods is slowly being erased, bit by bit, by the fact that some of the most innovative food coming out of the kitchen isn't even cooked! Adventerous and talented raw-food chefs like Sarma Melngailis, Ani Phyo, and Mathew Kenney are changing the way people think about raw food. Bloggers are helping forge the way, too. My personal favorite is Choosing Raw, a blog maintained by the delightful Gena Hamshaw, who also happens to be VegNews' raw-food columnist! Not only is she a total foodie genius, she's smart and sane, to boot. When I asked her for her favorite VegWeb raw recipe, she pointed me in the direction of Raw Green Soup, a super-tasty recipe that blends up avocados, cucumbers, and spinach to make a decadent soup that'd impress even the finickiest diner. Now, let's get un-cooking!

    Creamy Corn Soup with Red Pepper and Coconut
    Summer is the perfect time to not cook. Most of the country is sweating it out in the sweltering summer heat and the last thing you want to think about is turning on the oven. Well, thankfully, summer's bounty also brings the best fruits and veggies for smoothies, salads, and soups. This tremendous trio can get you through any heat wave in delicious style. This week, I'm throwing a few ingredients in the VitaMix to make the most perfect of summer soups. Combining corn, coconut milk, and red peppers gives you a creamy, tangy concoction that'll cool you down quick. Oh, and it's really, really tasty.

    What You Need:

    2 cups corn kernels, fresh or frozen
    1 cup coconut milk
    1 cup diced red pepper
    1/4 onion, chopped
    1 carrot, diced
    1 clove garlic
    1/2 teaspoon olive oil
    2 teaspoons fresh thyme, finely chopped
    Salt to taste

    What You Do:

    Place all ingredients in a VitaMix or blender and blend until creamy. Serve garnished with a sprig of fresh thyme and a glass of your favorite rosé.

    French fries or ice cream? Mango vanilla soy cream from Trader Joe's.
