We’re definitely suckers for avocado toast here at the VegNews Recipe Club, so we’re pretty excited to bring you this nori-topped take on the trendy breakfast food. From Julie Morris’ Superfood Snacks, this recipe takes the nutrition of avocado to a whole new level with the addition of walnuts, nori, and chia seeds. Lemon juice adds just enough tang to the buttery avocado, which tops crunchy slices of sprouted-grain bread. Although we can’t imagine breakfast without avocado toast, we’d be lying if we said we didn’t enjoy this delicious snack at all hours of the day.
