Healthy New Year's Recipes!
It's 2011! Can you believe it? I really cannot believe it. I guess time flies when you're cooking and eating delicious vegan food. Seriously, this past year brought thousands of new recipes to VegWeb. Every day when I open the site, I'm greeted with the likes of Yogurt Flatbread and Avocado Spring Rolls. What's a girl to do? Honestly, it makes it hard to get any actual work done. Well, I guess my New Year's resolution for this year is to cook and eat as much amazing vegan food as possible. Thank goodness for VegWeb and the kitchen creativity of our amazing members. 2011 is already shaping up to be a very tasty year!

    Killer Kale Stir-Fry
    Kale, you're the winter vegetable with the mostest. You're hearty, nutritious, and flavorful. Perfect in everything from soups and stews to ice cream. Yes, ice cream. I know, sounds crazy, but it works! My personal favorite is a simple stir-fry, though. Just a few ingredients, combining to create a masterful side dish. Increase your meal's healthy quotient by 100-percent when you serve it with a heaping side of this. Basically what I'm saying is, you can eat that ice cream for dinner, as long as kale stir-fry is your side dish. It's all about moderation, people.

    What You Need:

    1 tablespoon olive oil
    1 clove garlic, minced
    1 pound kale, washed and cut into large pieces
    2 teaspoons Bragg's Liquid Amino Acids
    Freshly ground black pepper, to taste

    What You Do:

    In a large skillet, heat oil over medium heat. Add garlic and sauté for one minute. Add kale and sauté for another minute. Stir in liquid animo acids and pepper and continue cooking until kale is tender. Serve with everything!

    Favorite VegWeb recipe to make for non-vegans? Happy Vegan Chocolate Chip Cookies! These cookies are amazing. We've made them dozens of times and they always turn out perfectly!

    Tofu, tempeh, or seitan? Tempeh all the way! Tempeh is fermented, so it is the easiest meat alternative to digest. And it makes a mean vegan bacon.
