St. Patrick's Day Party!
I have red hair. This means that every year on St. Patrick's Day, I will undoubtedly be harassed. Can I get a what-what from all the red headed ladies in the house!? You know what I'm talking about! I'm always extra careful to wear green on St. Patty's Day because forgetting means that I'll be covered in pinch-sized welts by the end of the day. One year, a delightfully inebriated man literally knocked me into oncoming traffic trying to pinch my cheek. Luckily, I was able to recover before becoming St. Patrick's Day roadkill and now, choose to celebrate the day at home. Besides, where else are you going to get vegan versions of the holiday classics? If there are any redheads in San Francisco who need to seek refuge from the (green) storm, let me know! I'm making doubles of everything because, well, why wouldn't you?

    Spot? Kitty? Sarah Jessica Barker? My dog's name is Hazel but her nicknames range from "Hazelton" to "Shmogger Dogger" to "Monkey Butt"? I don't know where I got the last one but it just popped into my head when I was looking at her one day and stuck. VegWebbers want to know, What are your animal nicknames?

    I'm not Irish but I can eat and drink like one. I'm not sure what that means but I'm assuming it's good; Irish people love food and drink, and so do I! Putting together my feast of Irish favorites for St. Patrick's Day, I noticed that the vast VegWeb dessert section is a little lacking in traditional Irish desserts. Never fear, VegWebbers. Your trusty recipe creator and tester is here! Um, that's me just in case you didn't get that. I am willing to put in the long, hard hours to ensure that we all have a tasty dessert come St. Patrick's Day. This Irish Apple Cake is a take on a traditional dessert and more importantly, delicious. My only advice is don't eat it all at once because there is a hearty dose of Whiskey involved. Or go crazy, it's only St. Patty's once a year, right!? Right!

    What You Need:

    4-ounces plus 2 tablespoons non-hydrogenated margarine (I prefer Earth Balance)
    1-3/4 cups flour
    1/4 teaspoon baking powder
    1/4 teaspoon salt
    1/2 cup sugar
    1/2 cup soymilk
    2 large apples, sliced (I like Granny Smith for the green color!)
    1/2 tablespoon apple pie spice
    1/4 cup whiskey

    What You Do:

    1. Preheat oven to 350 degrees. In a large bowl, combine 4-ounces of margarine with flour, salt, and baking powder until crumbly. Add sugar and soymilk and mix throughly. Form dough into two balls, and, on a floured surface, roll out each ball to a 1/2-inch thick round.
    2. In a saucepan over medium heat, melt remaining margarine. Add apples and apple pie spice and mix.
    3. Into a 9-inch cake pan, press one dough round. Place apple mixture in the center of the dough, then cover with remaining dough round.
    4. Bake for 30 to 40 minutes. Remove from oven and poke several holes in the top with a folk. Brush whiskey into the holes. Serve with coconut ice cream and possibly some more whiskey!
