Classic Seitan Gyros
Summer’s not quite here yet, but we’re ready to slip into vacation mode. And we’re thinking … Greece! Crystal clear waters, picturesque cliffside villages, and most importantly, incredible food. In preparation for all the vegan Mediterranean eats we’ll be savoring, we’re pre-gaming with this super-simple Classic Seitan Gyro recipe from Robin Robertson’s cookbook Veganize It!: Easy DIY Recipes for a Plant-Based Kitchen. Featuring thinly sliced seasoned seitan and fresh vegetables wrapped in soft pita bread, and drizzled with a garlicky tzatzkiki sauce, this plant-based take on the quintessential Greek sandwich will tide us over until we hit the sands of Santorini. And once we get back stateside, we’re keeping the good times rolling with a cross-country road trip to the 10 best vegan cities in America—featured in the May+June Spring Issue of VegNews, on newsstands now!
