 Incredible Italian Food! How much do you love Italian food? If you're like most Americans, you're pretty much infatuated. It's probably the one type of cuisine that I cook at least once a week, and I never get tired of it. Oh, and did I mention that my all time favorite recipe in the history of the world is Cheesy Lasagna? Seriously, it's the most delicious dish in the known universe. In addition, I declare 2011 the year of the vegan dinner party, and Cheesy Lasagna has a starring roll. Serve it up with Winter Pear and Spinach Salad and a big plate of garlic bread, wait for your friends to shower you with compliments—or cash, depending on how good of friends they are. If you really like them, you can even share the recipes. If not, just say they're from your nonna in the old country and she's sworn you to secrecy. Viva Italia!

Brilliant Bruschetta
What's an amazing dinner without an amazing appetizer? Crap! I joke, it's still great, but appetizers make everything better. It's just a little something to nosh on while you're waiting for your meal. Or to fill up on, if you're like me. Hello, bread basket; goodbye, restraint! Well, fear not. This bruschetta is satisfying, but light enough to enjoy a few pieces and still be ready for the main event. Circulate a plate of these bad boys at your Italian dinner party and see if your guests don't race to the table for more of your glorious cooking. Enjoy the recipe—and don't forget to invite me! I'm an excellent guest and I always bring vino. Salute!
What You Need:
4 large tomatoes, diced
1/2 cup sun-dried tomatoes, packed in oil
3 cloves garlic, minced
3 tablespoons olive oil
1-1/2 tablespoons balsamic vinegar
Salt and pepper, to taste
Baguette of choice, sliced in half, lengthwise, and cut into 1-inch pieces
What You Do:
Preheat the oven to broiler setting. In a large bowl, place all ingredients but baguette. Stir to mix and set aside. Place baguette slices on a large baking sheet and broil for 1 minute. Remove from oven and transfer to serving plate. Scoop tomato mixture onto baguette and serve immediately. Buon appetito!
