Easter Celebration!
Although I didn't grow up in a religious family, Easter was always a favorite holiday. That's because it meant candy. Loads and loads of candy. Easter egg hunts, candy baskets, and chocolate bunnies. Becoming vegan doesn't mean giving up all those delightful treats, it just means getting more creative. In addition to making (and eating!) all manners of delicious candies, you can get creative with Easter breads and dishes. And what of Passover? One of the most joyous meals of my life was celebrating Seder at a friend's house in middle school. I learned that you don't necessarily have to be religious to enjoy celebrating holidays of different faiths. And let me tell you, matzo ball soup won a fan for life. A Happy Easter and Happy Passover to all! Now, let's eat!

    Springtime Gardening! The days are longer and warmer, and we're all starting to emerge from our winter hybernation. What does that mean? Let's get dirty! In the garden, that is. VegWebbers are already at work on their springtime harvests in Organic Gardening.

    Hegans!? As far as I'm concerned, vegan men are the manliest of all. It takes some serious you-know-whats to stand up for what's right. However, sometimes those values are compromised in a world where being manly means eating steak for breakfast, brunch, lunch, dinner, and second dinner. Scary! What's your best advice for Veggie men dealing with "manly" men coworkers?

    Why is it that every holiday seemingly revolves around candy? What is that about? I think it just means that humans are super smart, right? I mean, candy is the yummiest and what's more fun than making a big batch of peanut butter cups or peppermint patties? Well, besides eating them? It's a blast to turn your kitchen into a make-shift chemistry lab. From melting chocolate for holiday molds (Easter eggs, anyone?) to using a candy thermometer for perfect vegan marshmallows, you can't go wrong. It's also a great activity to get kids in on. I hope to spend this weekend with my four year-old niece, turning my kitchen into a candy-making factory of epic proportions, just in time for the Easter Bunny. Silly Easter Bunny, getting all the credit for my hard work! Oh well. This recipe for chocolate peanut butter balls is simple, delicious, and great for when you have little helpers. That reminds me, I need to stock up on kitchen towels and all-purpose cleaner because this could get messy.

    What You Need:

    1-1/2 cups creamy peanut butter
    1/2 cup margarine, softened (I like Earth Balance)
    1-1/2 teaspoons vanilla
    2-1/2 cups powdered sugar
    1 8-ounce bag vegan chocolate chips
    1/4 cup cocoa powder
    2 tablespoons maple syrup
    2 tablespoons almond milk

    What You Do:

    1. In a medium bowl, mix together peanut butter, margarine, vanilla, and powdered sugar until combined and smooth. Place wax paper on a cookie tray. Using your hands, roll the mixture into half-inch balls and place on tray. Freeze for at least an hour.
    3. In a large bowl, place the chocolate chips and melt them in the microwave. Mix in the cocoa powder, maple syrup, and almond milk.
    3. Insert a toothpick into each peanut butter ball and dip into melted chocolate and then return to wax paper and refreeze. Serve from frozen and enjoy!

    All that spring cleaning can really take it out of a person. I haven't touched a broom all winter long and my apartment is currently one big dustball.
