Warm Soups & Healthy Salads

It's raining cats and dogs in San Francisco. Actually, it's not as adorable as it sounds; it's more wet, cold, and seriously dreary. This is the kind of weather where the only option is to grab a book, a blanket, a bowl of soup, and curl up on the couch. VegWeb has exactly the right soup recipes to keep you warm on a cold winter's night. If you want to keep it a little healthy, I've thrown in some tasty salads that will complete the meal. And when you're done with dinner, VegWeb might also have a recipe for the perfect hot, spiced wine. Yes, this is the kind of weather that drives a native San Franciscan to drink. I know those of you currently sitting under inches of snow are shaking your fist at the screen right about now. This is hard on all of us.

    When I was younger and got sick, I really thought I was dying. Well, that and I was working it so I didn't have to go to school. It seemed the only cure for my sickness (and sometimes "sickness") was a marathon of Clarissa Explains It All and a can of Campbell's Chicken and Rice Soup. I thought of it as my flu medicine, just tastier–the perfect combo of rice, seasonings, and comfort in a bowl. Now that I'm older, I know that what hooked me was most likely the perfect combo of salt, nitrates, and MSG. Yum. However, understanding that intellectually and cutting the cravings are two totally different things. Last week when I was deathly ill (read: I had a small cold, I'm still very dramatic), I needed a replacement, stat. This recipe conjures up all the deliciousness of my childhood with the added bonus of being actually good for me. This time I cuddled up with my dog, a marathon of 30 Rock, and a big bowl of Chicken & Rice Soup, ala Laura. So grown-up.

    What You Need:

    2 tablespoons olive oil
    1/2 onion, chopped
    2 celery stalks, halved lengthwise and sliced
    3 carrots, halved lengthwise and sliced
    1 tablespoon dried thyme
    1 teaspoon salt
    1 teaspoon pepper
    1 cup mushrooms, chopped
    1 quart veggie broth
    2 cups vegan chicken or seitan, diced (I use Gardein chicken strips)
    3 cups rice, cooked (I like a wild rice blend)
    1/2 cup soy creamer
    1/4 cup red wine
    4 slices of vegan bacon (I like to make my own with tempeh)

    What You Do:

    1. Heat olive oil in a large stockpot over medium heat. Add onion, celery, carrots, thyme, salt, and pepper. Saute until the onions are tender and translucent. Add mushrooms and cook for 5 minutes longer. Stir in the veggie broth and bring to a simmer. Reduce heat to low, cover, and simmer for 15 minutes.

    2. Uncover and stir in veggie chicken and rice. Continue to cook until heated through, about 5 minutes. Stir in soy creamer and wine and simmer an additional 5 minutes. Ladle into bowls and top with veggie bacon. Enjoy!

    What do you do when you're not on VegWeb? I work a lot, I'm a language/linguistics nerd so I do nerdy things. I'm going back to post grad study this year. I listen to Pink Floyd, Elbow, and The Dresden Dolls obsessively. I cook and eat a lot, and I'm learning to garden.

    Valentine's Day is coming up! Do you have a favorite romantic recipe on VegWeb? The Lasagne Love Potion! It takes a bit of effort, but it is really, really mouthgasmic.

    Best music to cook by? Depends on the mood. Jazz and swing usually works for me, or crazy psychadelic rock 'n' roll.

    Ice cream or French fries? French fries beat ice cream a million billion times over.

    I recently learned some disturbing news that I'm going to share with you because I'm a giver. Did you know that a common estimate for global consumption of plastic bags is more than 500 billion annually? Isn't that insane? I'm usually pretty good about bringing my own bags to the farmers' market but now I'm a thousand percent serious. From now on, I'm toting my veggies (and other more unhealthy things that may or may rhyme with "candy") home in the rePETe Sling Bag by Chico. The old, ugly reusable bags I usually use are getting a vacation of indeterminiate length; Mama's got a brand new bag! It's sturdy, hip, and you've got to have one, too. You'll need it to lug home all the good stuff to make enough soup and salad to last you into the next decade. You don't want to go back outside in weather like this, your mother wouldn't approve.
