VegWeb Newsletter: Summer Soups & Salads!

Get fresh with salad!

Summer Soups & Salads

Some people think vegans just eat salads. Here at VegWeb, we know that's wrong. We know the people who love to eat the most are vegans. We love to experiment with new, exciting kinds of food and there is never a lack of crazy spices and seasonings in a vegan kitchen. For me, becoming vegan opened a plethora of culinary doors. I might have never known about Mesir W'et or Tom Yum if I hadn't become vegan. Not only that, vegans can be just as much meat and potatoes as the rest of them – it's just our meat is tender, flavorful Seitan Ribs. Even with all that choice, sometimes we DO want a salad. Or a soup. But we like to mix it up and make them even more delicious than your typical iceberg wedge with ranch dressing. Summer is the perfect time to explore all of the creative, delicious salads and yummy cold soups on VegWeb. Enjoy!

That's-a pizza-pie!

Cooking with Webmistress Laura: Riblet Pizza!

Now that we have you excited about soups and salads, you need something to go with it! At VegWeb we have a million amazing recipes (well, okay, more like 30,000 but whose's counting!?), but at my house, the lazy days of summer call for lazy recipes. We all don't have the time or money to make extravagant feasts every night. That's why we have a section with Quick and Easy Recipes. I especially love this section. I love it a lot. I can't tell you how many times I've made Fast Tacos. And guess what? They rule. So from time to time I'll post a recipe that is, above all, easy, cheap, and creative, in addition to being delicious.

This is a recipe that I learned from my boyfriend, Jonas. It has exactly two ingredients, Amy's Cheeseless Pizza and Morningstar Riblets, and they are both pre-packaged and ready to go. Normally I would encourage you to buy local, organic, whole, etc., but this is perfect for when you're feeling budget and lazy-conscious.

1. Preheat oven according to pizza box instructions.
2. Thaw Riblet. You could put it in the microwave for a minute or so, or leave it on the counter while you do your roommate's dishes or something.
3. Cut Riblet into about eight or so chunks and place evenly around the pizza. Make sure you get all the extra barbecue sauce on the pizza too. If you were really nuts into the Riblet experience, you could try putting BOTH of them on the pizza.
4. Cook pizza according to package instructions.
5. The final step in any good recipe is "Enjoy!" –and this one is no exception.

May I suggest you serve this with the uber-simple and super tasty Quick and Easy Pear, Cranberry, and Spinach Salad? These two combined have a total prep time of roughly 15 seconds! Okay, ten minutes, but still.

Good luck!
