Healthy Fall Eating!
Raise your hand if you ate candy last weekend. Raise both hands if you ate A LOT of candy last weekend. My boyfriend is now typing because I'm too busy holding my hands way above my head. Friends, I went nuts. I ate so many Jolly Ranchers, Dum Dums, and Dots that I spent the majority of Halloween running around in circles and then passed out at 8 pm. I'm currently in a coma, and I need help. The only thing that can save me is hearty, nutritious food, and lots of it. Okay, maybe moderate amounts of it. If you're suffering from the same candy born craziness, hopefully the recipes below will help. Good luck, and I'll see you on the other side!

    Potato Leek Soup Perfection
    My boyfriend makes the most amazing potato leek soup. He's so talented, smart, handsome, and the most incredible chef. His potato leek soup is the stuff of cooking lore. It combines creamy potatoes, robust leeks, and scintillating spices to create a symphony of flavor. If you make this nourishing soup, you'll never want for anything ever again. Well, perhaps a good crusty bread to eat it with. My boyfriend thinks of everything! Please note: This is not Laura's boyfriend typing (read: it totally is).

    What You Need:

    2 tablespoons olive oil
    1 medium onion, diced
    2 cloves garlic, minced
    2 leeks, thinly sliced crosswise
    Salt and pepper, to taste
    1 teaspoon thyme
    6 large potatoes, cubed
    5 cups vegan chicken broth
    1/2 cup white wine

    What You Do:

    1. In a large pot over medium heat, heat olive oil. Place onion and garlic in pot and sauté until soft, about 2 minutes. Add leeks, salt, pepper, and thyme, and cook for 2 minutes, stirring occasionally.
    2. Add potatoes, broth, and wine and stir to combine. Cover and let simmer until potatoes are soft, about ten minutes.
    3. Pour half of the soup in a food processor or blender and mix until smooth. Pour back into pot and stir to combine. Serve hot and enjoy!
