So, last week I spoke about New Years' Resolutions and about getting healthy in general. Today, I'm gonna follow that up with a newsletter dedicated to one of my favorite healthy greens, kale! Kale is one of those foods that I thought I would hate until I tried it. It's all big and tough looking but actually can be quite tender and delicious. I feel like I'm describing a relationship I once had that did not end well. MOVING ON. To dip into kale, I started with a simple recipe for steamed kale and it was magical. Earthy and robust, the strong (but not in a bad way!) flavor of kale holds up well to strong seasonings. Toss it into soup or even a smoothie, and it adds vitamin C, vitamin A, folic acid, calcium, and iron to your meal. It's basically the reason the word "superfood" was invented. However, if you just can't be super healthy about it, as Tal Ronnen suggests in The Conscious Cook, you can deep-fry it. The man is a genius.

    This week, I'm stealing a recipe from VegNews. Don't tell them, okay? This will be our little secret. You see, I was thinking about my favorite kale recipes and nothing can top their marinated kale salad. Made with shitake mushrooms, avocado, and flax seed oil, it's easy to see why this is a VegNews favorite. Actually, kale in general is very big with them. For those of you who don't know, they have a blog dedicated to their amazing daily lunches. It's called Cafe VegNews and it's a MUST read for any vegan worth their weight in nutritional yeast. Many of the lunches involve kale, and they're all so tasty that I've literally licked the plate after some meals. And by some, I mean all. Since I visit the office weekly, I've been lucky enough to incorporate much more delicious kale into my life. Which is a good thing because then I feel less guilty about the (more than) occasional vegan brownie that I enjoy after.

    What You Need:

    1 bunch fresh kale, destemmed
    1/2 cup sliced mushrooms (shiitake or brown)
    1/4 cup red onion, sliced thinly
    1 avocado, diced
    1/4 cup flax seed oil
    1/3 cup fresh lemon juice
    Tamari (to taste)

    What You Do:

    1. Tear kale into small, bite-size pieces. In a bowl, toss all vegetables with kale.
    2. In a small bowl, whisk together flax seed oil, lemon juice, and tamari. Pour over vegetables and let sit for 10 minutes before serving.

    What do you do when you're not on VegWeb? I study, play way too many computer games, volunteer for Oxfam, cook (and sometimes even clean!), and fritter away time on the internet.

    Favorite VegWeb recipe to make for non-vegans? Thai-Inspired Veggie and Rice Soup. It's so great, I've made it several times with different ingredients and measurements, and it never fails to wow people.

    Any New Years' Resolutions? Work hard, play hard.

    Soymilk, rice milk, or almond milk? Soymilk for everyday use, rice milk for drinking with cookies.

    The holidays are finally over and we're all feeling like stuffed Tofurky sausages. I'm the girl who never turns down a sweet treat, and I found myself saying no to a slice of pumpkin pie this weekend. Unprecedented. Normally I find cleanses restrictive and a little scary (there's no candy bars on this cleanse? NO THANK YOU!), but I'm kinda feeling them lately. Especially the one from Garden of Life, which is all-natural, raw, and filled with good stuff like organic flax, chia, spirulina, and coconut flour. I guess I could use more of that. It's totally vegan and promises to boost your immune system, detoxify organs, and aid in digestion. And better digestion just means eating more delicious stuff in the future. I'll take it!
