Raw Cashew Horchata
Here at the VegNews Recipe Club, we love the creamy, sweet, and spicy flavors of horchata. While many traditional recipes call for a base of rice, almonds, or even tigernuts, this popular Latin drink may also include dairy, which is why we adore Somer McCowan’s twist with dates, cashews, and cinnamon. This veg-friendly version comes from McCowan’s The Abundance Diet, and features a hint of sweetness thanks to the dates and a pinch of warmth from the cinnamon. One sip, and you’ll know why this beverage is one of our favorite drinks ever!
Serves 2
What You Need:
2 tablespoons raw cashew pieces or whole cashews
2 to 4 soft medjool dates, pitted
2 cups water
1/2 teaspoon ground cinnamon
What You Do:
In a blender, add all ingredients. Blend until completely smooth and creamy, about 2 minutes.
