Thanksgiving Desserts!
Okay, let's be honest. I say "desserts" but you know what I mean. I mean PIE. I'll admit, Thanksgiving is pretty much lost in the woods without at least one pumpkin pie. Well, I covered pie pretty throughly in a recent newsletter, so let's highlight the other holiday dessert goodness at the table.     Easy Pumpkin Pie Ice Cream Pie
    Sometimes you don't have time to make a Pumpkin Pecan Pie but you still want all of the deliciousness with none of the work. That's where this fantastic ice cream pie comes into play. It combines two of my favorite foods, ice cream and pie, and turns them into one glorious creation. The result is fabulous Thanksgiving dessert tastiness crammed into a crust and frozen. If you want to take it to the next level, you could even serve this with a slice of Pumpkin Pie. I know, I just blew your mind.

    What You Need:

    1/2 gallon vegan vanilla ice cream, softened
    1 cup canned pumpkin
    1/2 cup brown sugar, packed
    2 teaspoons pumpkin pie spice
    Graham cracker pie crust (store-bought or make your own)

    What You Do:

    In a large bowl, place all ingredients except crust and stir to combine. Spoon mixture into crust, cover in plastic wrap, and freeze for at least an hour. Extra credit: Sprinkle with candied pecans or chocolate chips. Try not to eat the entire thing yourself!

    Soymilk, rice milk, or almond milk? Almond milk for cereal, cooking, and baking, and soymilk for coffee.
