Easy Pumpkin Pie Ice Cream Pie
What You Need:
1/2 gallon vegan vanilla ice cream, softened
In a large bowl, place all ingredients except crust and stir to combine. Spoon mixture into crust, cover in plastic wrap, and freeze for at least an hour. Extra credit: Sprinkle with candied pecans or chocolate chips. Try not to eat the entire thing yourself!

#1 cooking secret/tip? Put a lot of love into whatever you are making, it honestly makes a big difference.
What's the best thing about being vegan? Knowing that I am not contributing to the suffering of animals. I've also opened my mind up to so many new foods since becoming vegan—the food is delicious!
Soymilk, rice milk, or almond milk? Almond milk for cereal, cooking, and baking, and soymilk for coffee.
