I'm about to make a bold statement. Indian food might be my most favorite cuisine. Except for Mediterannean. And Japanese. Oh and maybe Mexican. What? Food is delicious! And it's especially delicious when you open your mind (and your stomachs!) to different tastes from all over the world. Some people complain about the foods that aren't available to vegans, but I eat so many more new foods as a vegan than I ever did before. If I hadn't become vegan, I might have never known the wonders of West African Peanut Butter Stew and Lebanese Aubergine and Courgette Curry. And that is a shame because those are like the two best things in the universe.

One of the greatest parts of enjoying Indian food is covering your food with different chutneys. A chutney is basically any sweet and sour condiment. After you start exploring them, you'll pretty much have no need for boring catsup and mustard again. Okay, well maybe that's a bold statment but they certainely liven up your dinner in a whole new way. We've got some great chutney recipes on VegWeb that I've spent the last ten minutes drooling over. As for me, I regularly make a coconut-mint one that isn't totally traditional, but is extremeley fast and easy, and beyond tasty. Serve it with any of the Indian food recipes on VegWeb (or pretty much with anything. Except maybe chocolate. Or you could try that! Who am I to stop you?) and you'll be a happy camper, guaranteed.
What You Need:
1/2 cup unsweetened, shredded coconut
1 bunch fresh mint leaves
3 green chilies
1/2 tablespoon ground coriander
1 tablespoon lemon juice
1/2 cup plain vegan yogurt (I use coconut yogurt)
Salt, to taste
What You Do:
Place all ingredients in a food processor and blend until fully combined. Serve cold.
