Superbowl Sunday Snacks!
You may recall that I wasn't very into Superbowl Sunday last year? Well, nothing has changed! I still can't tell a soft ball from a kick ball; and if you ask me who the Oakland Raider's quarterback is, I'm gonna tell you Wayne Gretszky. I will always lose at Trivial Pursuit because no matter how many times I try, the sport's pie eludes me! However, I can get behind game day appetizers and snacks. I don't mind heading to a friend's house to watch the big game, as long as it means there'll be an assortment of treats awaiting me. Besides, I think of Superbowl snacks as a test run for the main event: Oscar's Noshing. I mean, really. What's better than putting on your comfiest sweat pants, grabbing a giant bowl of peanut butter pretzels, and critiquing dresses from your couch? Nada. Happy game day watching to you, whether it be sports or starlets!

    Spicy Nuts
    Hehehe. Okay, I'm 12, but apart from the hilarious name, these nuts are delicious! Okay, I'll stop. Or at least try to. These nuts make the perfect snack to have lying around the house to munch on during the game. The spiciness of the cayenne mingles marvelously with the sweetness from the maple syrup, and makes the nuts highly addictive. Sit down with a bowl of these and a beer, and be the happiest person at the game, even if you don't know what a touchdown is. Pro tip: Just cheer when everyone else does and you're golden!

    What You Need:

    1/2 teaspoon ground cumin
    1 teaspoon cayenne
    1/2 teaspoon ground cinnamon
    1 teaspoon salt
    4 cups mixed unsalted nuts, choose your favorite (I like walnuts, pecans, and hazelnuts)
    1/4 cup margarine (I like Earth Balance)
    1/4 cup maple syrup or agave nectar
    2-1/2 tablespoons water

    What You Do:

    1. In a small bowl, mix the spices and salt and set aside. In a large saucepan, heat nuts over medium heat, stirring often, for five minutes. Place the nuts in a large bowl.
    2. In the same saucepan over medium heat, place the margarine, maple syrup, water, and spices. Cook, stirring often, until a glaze forms. Return the nuts to the saucepan and toss to coat. Cook for two more minutes. Remove from heat and transfer the nuts to a baking sheet until cooled. Serve in several bowls and be prepared to give out the recipe!

    What do you do when you're not on VegWeb? For now and in the foreseeable future, I'm a stay-at-home mom with a wonderful one-year-old girl. She keeps me very busy! Before that, I was a perpetual student and have degrees in evolutionary biology and human nutrition.

    What's one unique thing about you? My culinary tastes and horizons have expanded so much. I eat more variety than I ever could have dreamed of before becoming vegan.

    Favorite VegWeb recipe to make for non-vegans? My omni dad loves Baked Chimichangas.

    Tofu, tempeh, or seitan? Tempeh.

    We're still in the trenches as far as winter is concerned. Most of the Midwest is under a layer of snow, and the rest of the country is enjoying weather that ranges from freezing rain to frigid chilly. Ugh.
