Fall Into Comfort Food!
So, I've finally come to terms with the fact that summer is over, and that's an okay thing. Hammocks are being stored, beach pails are being emptied, and my beloved strawberries are disappearing from farmers' markets. The only way to alleviate the pain of these changes is to start focusing on fall's bounty. I'm talking comfort foods galore. While summer is all about light and breezy, fall is about big casseroles, hearty soups, and mile-high apple pies. Hello, fall. I think I could get used to having you around!

    Cheesy Brussels sprouts
    Brussels sprouts, love 'em or hate 'em, there's no in between. Well, I love the little suckers, and when you cook them up this way, you'll love them, too. Or you won't as there's no accounting for taste! Literally. The reason why some people hate sprouts is probably on account of genetic variations in our taste perceptions. Crazy! So, if your Brussels sprouts are too bitter and pungent for you, feel free to replace them with potatoes or cauliflower in this recipe. Everyone else, let's try not to feel too bad for those poor souls, and get down to eatin' some sprouts!

    What You Need:

    6 cups water
    1 pound Brussels sprouts, trimmed
    1/4 cup margarine
    2 tablespoons all-purpose flour
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1/2 tablespoon garlic powder
    2 tablespoons nutritional yeast
    1-1/2 cups soymilk
    2-1/2 cups vegan cheese

    What You Do:

    1. In a large pot, bring water to a boil. Reduce heat to medium, add Brussels sprouts, and cook for ten minutes. Drain, rinse in cold water, and set aside.

    2. In a large saucepan over medium heat, melt margarine. Stir in flour, salt, pepper, garlic powder, and nutritional yeast. Cook one minute and then whisk in soymilk. Bring to a simmer, whisking constantly, and cook until thickened, about 2 minutes. Stir in the vegan cheese until it's melted and smooth. Transfer the Brussels sprouts into the sauce, stirring to coat. Enjoy!
