Paul D. Williams, winner of last month's blog candy, kindly shared with us this photo over email.  What a great, and inexpensive, way to store your wine!  Paul said the plastic shelves came from Wal-Mart; and if anyone needs any wine boxes, just let me know next time you come by the winery.  I've got plenty!

Hi Valued Customer,

Happy Spring!  Wow, I can't believe all the flowers that popped out with this warm weather.  I think I've got my camera in overdrive trying to capture all the wildflowers, trees, and bushes that are in full bloom right now.  The warm weather and bright color is especially appreciated after what seemed like the longest winter on record!  Don't wait too much longer for a visit - I don't know how long these first blooms will hold out for you!

A Little Food With Your Wine?

Here's a variation I tried on the Easy Chicken Piccata recipe from About.com.  The tangy flavor from the lemon seemed perfect for a warm spring evening!

Cumin Chicken

Ingredients:

  • 4 chicken breast cutlets (about 1-1/2 pounds)
  • 1 Tablespoon whole wheat flour
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 Tablespoons olive oil
  • 3/4 cup Sweet River White, split
  • 1 Tablespoon butter
  • Juice of 1/2 a lemon (about 1 Tbl.)

Preparation:

Combine flour, onion powder, cumin, salt, and black pepper. Sprinkle mixture evenly on both sides of chicken cutlets.

Heat a large heavy skillet over medium heat until hot. Add the olive oil and swirl to coat the bottom of the pan. Add the chicken in one layer and cook on the first side for 5 minutes, or until golden brown. Turn and brown the other side. Turn only once. (It will cook more later.) Remove to a platter.

Add 1/4 cup of the Sweet River White to the pan drippings and cook, scraping up the browned bits, until syrupy. Stir in the butter, lemon juice, and the rest of the wine. Cook for 2 minutes.

Return chicken to the pan, turning to coat both sides with sauce. Simmer, covered, until chicken is no longer pink in the center (160 on an instant-read thermometer). Let rest for 2 minutes, then serve with pan sauce.

I served this with wild rice, asparagus, and a salad.  It really all came together quickly and easily, just like the recipe promised.  Bon Apetite!

That's it for this month.  I hope you all enjoy the spring weather, and can come out for a visit to Peaceful Bend soon!

Cheers, Katie
