Wine TipSediment often forms in wine over time or sometimes just by chilling the wine. The tartaric acid and the potassium in the wine combine into a crystallized sediment the Germans romantically named 'wine diamonds'.
Although harmless, this sediment can be annoyingly gritty. Use a coffee filter and pour the wine through that to get rid of the sediment. Alternatively, you can slowly pour the wine out of the bottle and into another container (called decanting), leaving the sediment in the original bottle.

Hi Dan,
If you follow the blog on the homepage of our website you might recall that a couple of weeks ago, I was pretty nervous about whether Clyde would get the cellar cleaned up in time for the Americana Festival in May. Well, he pulled through again this year and we enjoyed some fabulous music on the cellar's stage. He's left the stage in place for one more concert this month, so I've been having fun doing morning workouts and a few yoga sessions in front of the wine barrels. It's definitely a unique spot to exercise!
I'm really looking forward to this year's Chamber Music Concert on June 12. We'll be adding Eugenia Zuckerman to the mix of musicians that has played in our cellar this year. Eugenia is a renowned flutist and is currently the artistic director of the Vail Valley Music Festival. Many of you may remember her as one of the correspondents for CBS Sunday Morning. She'll be joining Burkhard Maiss and Bogdan Jianu for what will surely be a concert to remember!
Once the concert is over, we'll be turning our cellar back to wine work and getting a few more varieties bottled before harvest starts up again. I'm constantly amazed how time flies around here. It's a good thing I can slow down and relax with a glass of wine and a visit with you every now and then! Cheers, Katie
What's Going On?
June 5 - Julie will be at Mace's grocery in Cuba Missouri from noon-3pm for a tasting. Grocery shopping is so much more fun after a tasting, don't you think?!
June 12 - Wine Cellar Concert. We've teamed up with Arts Rolla, Brewer Science and KMST to bring you the wine cellar concert again this year. We welcome back Burkhard Miass and Bogdan Jianu of the Jacques Thibaud Trio along with Eugenia Zuckerman, renowned flute player. Tickets are $35 each and available through the winery (573-775-3000), Kent Jewlery in Rolla (573-364-1030), and the Arts Rolla office (573-364-5539). Reserve your tickets today! Tickets include an hors d'oeurve hour starting at 6:30pm. Concert begins at 8pm.
June 25 - Art Reception 6-8pm. Join us for this free event and view the paintings of one of Steelville's local artists - Jane Bowness. Light hors d'oeurves will be served during the reception.
A Little Food with Your Wine?
I'm not the only one getting a workout around here - our grill is working pretty hard lately too! Here's what Donnie (Amanda's husband) did with some Halibut fillets during the festival.
Ingredients - Halibut fillet(s)
- approximately 1/4 cup Harvest Mist
- 1-2 tablespoons butter
- one small orange, sliced into 1/4 inch thick rounds
- one lemon, sliced into 1/4 inch thick rounds
- salt & pepper optional
Directions - Place fish on a large piece of tin foil.
- place 1-2 tablespoons of butter on top of each fillet
- Pour the wine over the fillet. Optional: season the fillets with salt and pepper at this point.
- Layer the fruit slices over the fillet.
- Completely wrap the fillets with the tin foil.
- Place on grill and cook until the fish is done to your taste.
- Unwrap and enjoy!
2008 Cabernet Sauvignon Now Available
We have a small bottling of Missouri-grown Cabernet Sauvignon that is available starting this month. Unfortunately, since we didn't make much of the Cab, it won't be available to taste in the salesroom. Look for a special tasting event in July if you wish to try the Cabernet, otherwise, you can purchase a bottle anytime from us here at the winery. $45/bottle.
