Welcome to this edition of "The Travel Times" the monthly newsletter of Resorts360! In this edition we will announce one of our new club features, bring you on a Caribbean adventure all the way to the beautiful Belize, and end with a Belizean version of the ever so popular American burger!

Belizean Burger


This recipe is easy to make and absolutely delectable. If you think the all American hamburger is something to cheer about, then this Belizean burger recipe will definitely knock your socks off!

The first step is to make your Lemon Aioli:

INGREDIENTS

  • 3 tablespoons lemon juice
  • 1/2 cup mayonnaise

DIRECTIONS

  1. Whisk ingredients together and refrigerate until ready to use.

The second step is to make your Rice Cakes:

INGREDIENTS

  • 1 cup uncooked long grained rice
  • 1 cup coconut milk
  • 1 cup water
  • 15 oz can small red beans (rinsed and drained)
  • 1 1/2 teaspoon salt
  • 2 eggs lightly beaten
  • 2 teaspoons Achiote paste
  • 1/2 cup flour
  • 1-2 Tablespoons peanut oil

DIRECTIONS

  1. In a medium saucepan, add rice, coconut milk, water, red beans and ½ teaspoon salt and bring to a boil. Reduce heat to low, cover and simmer for 15 minutes or until rice is done.
  2. Place rice and beans into a large bowl. Add the remaining ingredients and mix thoroughly. This makes a little too much, but the rice cakes make a nice snack.
  3. Form six rice patties and place on a plastic wrap covered platter, cover with plastic wrap and refrigerate for 15-30 minutes.
  4. Heat oil in a non-stick pan over medium high heat until shimmering. Place patties in oil and cook for approximately 2 minutes or until well browned. Turn and cook for another 2-3 minutes until browned and cooked through.

The third step is to make the Belize Burger:

INGREDIENTS

  • 2 medium dried ancho chilies
  • 1 Tablespoon coconut oil
  • 1 pound cod or other flaky white fish
  • 1 teaspoon peanut oil
  • 1/2 cup onion minced
  • 1 medium jalapeno minced
  • 2 cloves of garlic minced
  • 1 teaspoon salt
  • Juice from 1 lime
  • 1 cup flour
  • 1 teaspoon baking powder
  • 2 eggs lightly beaten
  • 1-2 Tablespoons peanut oil
  • 4 Belizean Rice and Beans Cakes (from second step)
  • 1-2 tomatoes sliced thin
  • 1 avocado sliced
  • Lemon Aioli (from first step)

DIRECTIONS

  1. Place ancho chilies in a heat proof bowl and pour boiling water over them. Let sit for at least 15 minutes to rehydrate. Remove seeds and chop chilies and set aside.
  2. Heat coconut oil in a large saute pan over medium heat until oil is melted. Add cod, sprinkle with salt and lime juice. Cover and cook over medium heat for approximately 2 minutes per side or until fish is just cooked. You should have about 2 cups of cooked fish when you're done. Flake fish into a large bowl and set aside.
  3. In a small saute pan, heat 1 teaspoon peanut oil over medium heat. Add ancho chilies, onions, jalapenos and garlic and saute until onions are just beginning to soften. Add to fish and mix with a wooden spoon until evenly combined. Add flour, baking powder and eggs and mix until combined. This will make a pretty wet mix, that's okay; you want your cakes nice and moist.
  4. In a large nonstick pan, heat the 1-2 Tablespoons peanut oil (enough to cover the bottom) until shimmering. Form patties out of the fish mixture and place in the hot oil. Cook over med-high heat for about 2 minutes per side until nicely browned and cooked through.
  5. Place one Belizean Rice and Beans cake on each plate. Lay 1-2 slices of tomato on each rice cake. Add cooked fishcakes to each plate and top with avocado and Lemon Aioli. Serve immediately.

The Beautiful Belize

Like many small countries, Belize is home to a culture much larger than its square footage. 1. The Rainforest

The Belizean rainforest is the most intriguing of them all. The rainforest makes up a large part of Belize and is home to more than ten thousand species of plants and animals, including jaguars, toucans, and over 250 types of orchids. There is no feeling quite comparable to the feeling you get when walking through this breathtaking paradise. 2. The Beaches

Along its Caribbean coast, Belize is lined with white sand beaches and offers some of the best snorkeling and diving in all the Caribbean. The beaches are quiet and quaint and are the perfect place to unwind from all of life's to-dos. Spend your day soaking up the sun on the beach, enjoying a bite to eat at one of the many restaurants and bars, or shopping for souvenirs at the fun and eclectic shops. Once the sun has set and the day has come to an end, make sure to step out on the town and embrace some low-key nightlife. Ambergris Caye, San Pedro is one of the country's best beach destinations, embracing their British Colonial heritage and their surrounding Caribbean culture.

3. The Ruins

Extending all the way down into Northwestern Belize, the Mayan Ruins are an absolute must-see on your trip to Belize. These fascinating archeological structures date back to 2000 AD and have remained untouched throughout the centuries. Visit the Maya pyramid, "Caana", at Caracol in the district of Cayo. To this day, this Mayan pyramid is still the tallest man-made structure in all of Belize. Also, while you're there make sure to climb the Mayan High Temple in Lamanai. The views from the top of the temple will undoubtedly take your breath away.
