Join us for our next Regional Wine Dinner Wednesday, March 25, 2009
A Taste of Emilia-Romagna
This month’s special dinner features the food of Emilia-Romagna, considered by many the gastronomic capital of Italy. It is the home of many culinary benchmarks - Parmigiano-Reggiano, prosciutto di Parma, and aceto balsamico to name a few. Our chef Alex worked at Al Cambio in Bologna, with Massimo Poggi,a master of modern Italian cooking. While in Bologna he also learned the art of making fresh pasta. Even though Emilia-Romagna produces some distinguished wines, not many are considered among Italy’s best, and if you were to dine in Bologna, Parma, or Modena, you might be as likely to order wines from surrounding regions. Tonight we’re offering four wines which we think pair beautifully with the dishes we’ve prepared. ANTIPASTO Antipasto Misto Crostino di mortadella, prosciutto di Parma, Parmigiano al balsamico, grissini al sesamu Terlano Pinot Bianco - Alto Adige 2006
PRIMO Triangoli alle Erbette e Salsiccia Fresh pasta triangles stuffed with chard, sausage, and ricotta Felsina Farnetella “Lucilla” - Toscana 2006
SECONDO Stinco di Maiale Confit pork shank, Parmigiano potato puree, red wine veal reduction Garofoli Rosso Conero “Piancarda” - Le Marche 2005
DOLCE Cassata Bolognese Candied fruit and hazelnut semifreddo Maculan Dindarello - Veneto 2004
