The Low Down on Eggs and What's in Season! May 2008

May is National Egg Month  so now is a great time to remind ourselves of the many health benefits of this nutrient dense food. 

Eggs are a great source of protein and are also loaded with many other important nutrients including iron, selenium, choline, riboflavin, vitamin B12 and vitamin D.

Studies have also shown when eggs are eaten as part of your breakfast, it leads to increased satiety and an overall decrease in total calorie consumption! Additionally, egg-based breakfast has been linked to increased energy and decreased waist circumference. less calories, more energy and a smaller waist! They really are incredible!

What's in Season!

Seasonal produce has been shown to not only have more vitamins and minerals than unseasonal produce, but also have had less treatment (irradiation, preservatives, etc). Here are a few produce items that are currently in season.

  • Asparagus (white and green)
  • Broccoli 
  • Strawberries
  • Radishes
  • Rhubarb

Seasonal Recipe: Balsamic Roasted Asparagus from Cooking Light Magazine.

Ingredients: 

1 pound asparagus
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon kosher salt
1/2 teaspoon bottled minced garlic
1/4 teaspoon freshly ground black pepper

Preheat oven to 425°.

Snap off tough ends of asparagus. Place in a pan. Drizzle with olive oil and vinegar; sprinkle with salt, garlic, and pepper, tossing to coat. Bake at 425° for 10 minutes, turning once.

Yields: 4 Servings

Nutritionals:Calories 67calories, Fat 3.6g (sat 0.5g, mono 2.7g, poly 0.3g), Protein 2.5g, Fiber 2.5g, Calcium 26mg, Chol 0mg.
