Peanut Noodles with Raw VeggiesIngredients 1 pound cooked soba noodles 1 carrot shredded 1 cup shredded savoy cabbage 2/3 cup creamy peanut butter 1/4 cup soy sauce 1 tablespoon Asian sesame oil 1 clove chopped garlic 2-3 tbsps boiling water 1/4 cup chopped scallions Preparation Whisk together peanut butter, soy sauce, sesame oil, chile paste, garlic, and boiling water until smooth. Toss noodles with peanut sauce over noodles and then add carrot, cabbage, and scallions. Also delicious with cucumbers, peppers, or zucchini.
